I’m gonna tell ya’ll something and it’s gonna make you gasp
and maybe hate me a tad…but I feel like you need to know. Okay here it goes… I, Brittany McGee, HATE summer. Yes you read that right I hate it. I hate the 95 degree days and I really really hate the 345% humidity levels we seem to have. If you could find me a place that was fall half the year and spring the other half I would be in heaven. Until then I’m praying climate change isn’t real and summers here continue to only last for 3 1/2 months. In my defense I run about 30 degrees hotter than the average human, I get it from me mom, we equally hate this time of year.
With that being said I will say I do love the food the summertime brings. Fresh veggies picked right from your garden, BBQ’s, fresh sweet corn…oh sweet corn how I love thee. So what if I have to enjoy these foods inside with the AC blasting, they are delicious. My husbands favorite summertime treat is fresh salsa, the second our garden produces a tomato and pepper he is begging for it. It’s so easy to make and so delicious I promise you will be the belle of any barbecue you bring this too.
I love making this salsa because fresh veggies don’t need help in the flavor department. The rice vinegar and sugar add just enough zing that you don’t really need anything else! You also can customize it (but don’t leave out the rice vinegar and sugar) with whatever produce you have readily available. Plus the fact that you can make it in 1o minutes means it’s right up my alley.
Doesn’t that delicious looking salsa make up for my hatred of the season?
