I’m going to go ahead and apologize right now. I made this to photograph for the blog and while I ran downstairs to grab a memory card for my camera my husband and daughter grabbed plates and went to town. So I have no photographs other than this one of it getting ready to go in the oven. I guess I should be happy because they loved it so much but they messed up my post. Next time I make it I’ll photograph and update here!
This recipe is really quick and easy but does not lack in the flavor department! Roasted over a bed of veggies creates a tender side filled with all the delicious flavors of the chicken. My tip for getting the juiciest chicken thighs? Roast on the lowest rack in your oven. A lot of people use the top or middle rack and that just causes your chicken to dry right out. Since this only takes minutes to prep and thirty minutes to bake its perfect for those busy weeknights.
