My daughter LOVES blueberries, me not so much. Yesterday her and my husband went blueberry picking and brought home 10 pounds of these little blue devils to figure out what to do with. Luckily I do love baking, so be prepared for some blueberry items on the blog.
This morning I whipped up my daughters favorite snack, frozen yogurt berries. Two of her favorite things, two of my least favorite…I’m not sure if she is even really my kid. The recipe take 3 ingredients and about 2 minutes to make though, so that I can get on board with.
All you need to make these is 2 cups of blueberries, 1 cup of yogurt, and 2 tablespoons of sugar. You can use any type of yogurt, we used strawberry greek today. I tend to prefer greek over regular for this just because it’s thicker and I think it sticks better, but anything will work. Also if you want to make it a healthier snack, skip the added sugar!
Mix together the sugar and yogurt (if using) and add in the berries. Fold them in so you don’t squish them. If you have a toddler like me who doesn’t know the word gentle, then I would have them sit out this step…I let Noelle mix the first batch and instead we had a smootie
Next spread out onto a baking pan and pop in the freeze for an hour. I cover mine with parchment paper, because I’m lazy and hate cleaning my baking pans..I’m not the only one right?!
Once they are frozen break apart and store in a container in the freezer. Boom. Done!
Your kids will love these and you’ll love giving them a frozen treat that isn’t on a stick and doesn’t melt all over your hardwood floors. Enjoy mama!
