I try very hard to limit our gluten intake, it hates me and my daughter. However I slacked big time the last 15 weeks of my pregnancy, because when you are in your trudges of your first trimester you just eat what you can choke down and for me that was a lot of pizza. Now that the nausea fog is getting a little better I can focus a little more on what we put into our bodies. Poor Noelle will break out in eczema when she eats a lot of gluten and junk, just like her mom….sorry kid. However how do you deny a child (or yourself) cookies every now and then?!
Thats where this recipe comes in handy. It only uses 3 ingredients, all of which I’m willing to bet you have in your house: peanut butter, sugar, and an egg. Theres not much I love more than cooking with my girl and she loves it just as much!
Like I said this recipe is EASY like pinch me easy ( do you notice a theme in my life? We tend you like easy) Who doesn’t love something that takes all of 30 minutes from start to finish and 3 ingredients.
You simply mix 1 cup sugar, 1 cup peanut butter, and an egg together. I usually always turn to my trusty kitchen aid mixer but no sense in dirtying that bad boy up for this easy recipe!
I rolled into balls and placed on my cookie sheet. When you are baking & trying to photograph with a 2 year old you forget things. So I forgot to snap a pic but I did use a fork to press down and sprinkle with a little extra sugar…because why not?
Finally pop these bad boys in your 305 degree oven and make for 10-12 minutes until a delicious golden brown!
