I told you guys I would be spamming you with blueberry recipes and today continues that. Today’s recipe is for a Blueberry Crumb Cake, and is adapted from The Pioneer Woman’s recipe that you can find here. Some girls dream of being a Kardashian, I have always dreamed of being Ree Drumm. She lives my dream, plus she is so darn cool!
As you can imagine with baby girl due in October, I’ve been craving fall..BAD! For some reason crumb cakes always remind me of crisp cool days, and today when it’s 98 out, it’s those memories that bring me a little joy. Noelle was asking to bake a pie today, but I just wasn’t feeling it. In fairness she asks for pie and french fries for every meal so she used to hearing no when it comes to that. We settled on blueberry crumb cake, and when she ate it there was no complaining. So gather all of your ingredients and break out your mixer!
You are going to start by creaming your butter and sugar together. Once you do that add in your egg, then your vanilla. When I first started baking with my grandma as a little girl, she always told me a little extra vanilla gets the job done… so don’t be afraid to let it runneth over.
Mix your flour, baking powder, and salt in a seperate bowl.
Alternate flour mixture and milk into your butter and sugar. Make sure you don’t over mix this!
Once it’s all mixed together add in your blueberries. I kind of went of overboard here with berries because we have so many! It turned out amazing though, so I’m glad I added a ton more.
Spread mixture into a greased cake pan.
Now we will want to make our crumb topping. This for me is always hard to not eat, because it’s my favorite things in all of the land…butter and sugar. This pregnancy has made my already sweet tooth even sweeter. It’s a miracle I’m not a metric ton. Anyway back on track… using your pastry cutter cut your butter, sugar, flour, and cinnamon.
Add that goodness right over the cake.
Bake for 45 minutes. Be prepared for your mouth to start watering as the aroma fills your kitchen, but fight the urge and let that baby cook! Once it’s done let cool then serve with some vanilla ice cream, because why not?!
