With a football coach husband, a toddler, a newborn, and two crazy work schedules, breakfast in our house has to be fast. For years, that meant swinging through a drive-thru to get a breakfast on a bun and an extra-large soda (Dr. Pepper, please and thank you). But that wasn’t a healthy choice for our bodies OR our wallets. I’m not sure what came first, the urge to eat healthy or the need to save money, but I came up with a solution to both.
After our youngest was born, I started making a breakfast casserole or frittata on Sunday afternoons for our breakfasts throughout the week. I make a different version each week and haven’t gotten bored yet. By prepping this meal once, all we have to do is warm it up each day, add coffee, and go. Breakfast in 50 seconds.
I use a base recipe and add whichever veggies and meats I have on hand. Sometimes, we have hashbrowns. Sometimes, we have bacon. Sometimes, it’s meatless! Sometimes, it’s a combination. Every time, it’s delicious. And so easy.
50-Second Frittata Base Recipe
¾ cup milk (or half and half if you’re feeling fancy)
½ onion, diced and sautéed
Salt & pepper
Add your choice of toppings:
-Handful of spinach or kale, cooked until wilted
-1 cup cherry tomatoes, cut in half
-1 cup Pico de gallo
-¾ lb bacon, turkey bacon, sausage, chicken sausage, etc.
-½ cup cheese (our favorites are feta and cheddar)
-1 head of broccoli, chopped and sautéed
-sweet potato fries
Which ingredients together in a large bowl. Grease baking dish and pour everything in pan. Bake at 350 for 45-50 minutes.
